Audrey's Homemade Kahlua

     I begged this recipie from the proprietor of Audrey's Coffee and Pastries on the island of Taveuni in Fiji.  Audrey is a lovely older lady who serves up coffee & tea, cakes and pastries on the front porch of her home which looks out over a scenic reef on the north end of the island.  Whatever you order, it is served with a little glass of her treasured homemade Kahlua. 

 

12 Cups water

7 1/2 cups sugar

2 1/4 cups instant coffee granules

    Mix the above in a pot and simmer for 2 hours.  Cool and add:

6 1/2 cups dark rum

6 1/2 cups vodka

10 Tbsp. vanilla extract

Mix and store in bottles for at least 1 month before serving.  Makes 6 liters, which will probably last you a long long time unless, like Audrey, you give it away to everyone who comes to visit you.
